For the weeks I’m too exhausted to think of what to make, cooking up a big batch of chicken to use throughout the week gets me through.

Comment “PREP” and I’ll DM you a list of everything I used here, from my big baking dish I use every day to the containers I use to store prepped foods and leftovers with.

Here’s an outline of the meals I made. They’re so simple you cannot mess them up! I love cooking these on my @blackstoneproducts for extra ease but you can cook them inside on the stove as well!

Meal 1: Cook all your chicken for the week. Season with seasoning of choice, and cook everything through.

Portion out chicken for dinner and 3-4 portions for meals during the week.
Serve with veggies and Rice

Meal 2: Use leftover rice, chicken and fresh veggies to make a stir fry. Season with salt, pepper, and stir fry sauce. (leftovers are great for lunch!)

Meal 3: Enchilada Bake. Mix up chicken, and preferred enchilada fillings (Black beans, onions, rice, cheese etc) layer between corn tortillas and sauce. Bake at 375F till bubbly

Meal 4: Flatbread Pizzas. Use chicken for toppings on pizzas. Reheat chicken, and add any favorite toppings and flavors to your pizzas. Always fun and so easy!
