Game Night Snacks: Peanut Butter Energy Bites
Snacks so good, you’ll need to make a double batch! These are the perfect sweet bite!
I like to make a couple different sizes when we make these. Some large and others more bite size! They are completely customizable so try out a bunch of different toppings to create your own flavors.
There are literally hundreds of ways to make these, so this is by no means the only way, but this is what we like to do!
Peanut Butter Energy Bites Base
(This makes about 2 dozen balls)
3 Cups Old Fashioned Oats
1 Cup Peanut Butter (We also like them with almond butter)
1/2 cup Honey
1/2 cup chia seats
1 – 1.5 Cup mini chocolate chips or your favorite mix-ins!
Mix together in a bowl so it is all combined and sticks together.
Scoop balls with a cookie scoop and roll in your hands to make a round ball. (If it keeps falling apart, try adding a bit more peanut butter or freezing it for 10-15 minutes so it hardens up a bit.)
Add to a cookie sheet and freeze for at least 30 minutes before adding to your storage container.
We like to keep ours in a freezer bag — they can be eaten right out of the freezer!
Mix in and Flavor ideas
- Add a tablespoon of cocoa powder with chocolate chips and Sea Salt for a double chocolate treat!
- Sprinkles and 1-2 tsps vanilla flavoring for a birthday twist.
- Swap out your peanut butter for almond butter and add chopped almonds!
Or try this S’mores inspired flavor my daughter created!
- Substitute one cup of Oats for 1/2 cup crispy rice cereal and 1/2 cup crushed graham crackers
- Cut mini marshmallows into tiny pieces and add to each ball before rolling.
